La Sfoglina di Bologna
The “sfoglina” is a very particular professional figure originated from the gastronomic tradition of Bologna, chief town of Emilia-Romagna.
Its name comes from the “sfoglia” - the fresh pasta sheet - and Bologna is the city where this art was born and where the “sfoglinas” have been present in every household for centuries.
She is the one who makes fresh home-made pasta every day and transforms every single sheet in lasagne, tagliatelle, tortellini, gnocchi, and many other pasta types to be served with ragù, other condiments and sauces, or in broth.
Without a doubt, the Sfoglina still represents the culinary art of Emilia Romagna.In Italian is pronounced “spho-lyee-na”, while in the local dialect, it is also called “azdora” or “zdoura”.
